Microbial transglutaminase (mTG) is an enzyme widely used in the food and biotechnology industries for its ability to catalyze the formation of covalent bonds between proteins. This enzyme is produced by various microorganisms, with Streptomyces and Bacillus species being common sources.

### Product Description

**Name:** Microbial Transglutaminase with C-terminal His6-Tag

**Enzyme Classification:** EC 2.3.2.13

**Source:** Typically produced via recombinant DNA technology in microbial hosts such as Escherichia coli or other expression systems. The enzyme is genetically engineered to include a His6-tag at the C-terminal end, allowing for easy purification via nickel-affinity chromatography.

**Structure and Properties:**
- **Molecular Weight:** Approximately 37 kDa, though this can vary slightly depending on the specific sequence and expression system.
- **His6-Tag:** A sequence of six histidine residues added to the C-terminal end of the protein. This tag facilitates purification and detection due to its strong affinity for nickel ions.
- **Optimum pH and Temperature:** Generally active at a pH range of 5-8 and an optimum temperature around 50°C. However, these conditions can vary depending on the source organism and specific enzyme variant.

**Applications:**
- **Food Industry:** Used to improve the texture and stability of food products such as meat, dairy, and plant-based alternatives through protein cross-linking.
- **Biotechnology:** Employed in protein engineering and immobilization, as well as for the preparation of protein conjugates.
- **Research:** Utilized in studying protein interactions and modifications due to its ability to form isopeptide bonds between glutamine and lysine residues.

**Purification and Handling:**
- The His6-tag allows for efficient purification using immobilized metal affinity chromatography (IMAC), typically involving nickel or cobalt ions.
- The enzyme should be stored at appropriate conditions (usually -20°C or lower) to maintain stability and activity over time.

**Safety and Regulatory Considerations:**
- As with any enzyme preparation, handling guidelines should be followed to prevent allergic reactions or respiratory issues.
- Regulatory approval may be required depending on the application and region, particularly if used in food products.

This product is an invaluable tool in both industrial and research settings due to its versatility and ability to enhance protein properties.
